Ingredients
- 2 turkey legs and wings
- 2 tbsp kosher salt
- 6 cloves garlic minced
- 3 tbsp dark soy sauce
- 2 tbsp soy sauce
- 1 tbsp shaoxing wine
- 1 tbsp sugar
- 2 tsp five spice powder
- 2 tsp sesame oil
- 1 tsp white pepper
Directions
1. Combine ingredients for marinade and spread on turkey. Place on tray to marinate overnight
2. Heat oven to 450F. Put turkey onto wire rack with lined pan beneath. Put 1/2 cup water into bottom. Insert probe into thickest part of thigh. Cook until thigh reaches 165F.
3. Remove thighs and rest. Pour off pan juices through a strainer. Skim off fat, serve on the side.
