Baked Potato Latkes

 - 4 large russet potatoes

- salt and pepper

- canola oil


Directions

1. Adjust rack to middle of oven, set at 350F. Bake directly on rack for 30 minutes, flip and bake 15 mins more. Remove and let cool for 30 mins

2. Cut potatoes in half, Grate flesh side down. Add 1 tsp salt and 1/2 tsp pepper to grated potatoes

3. Form patties using 1/2 cup of potatoes. Place on a plate and refrigerate a few hours

4. Fry in canola oil in 2 batches, 3-4 mins per side. Drain oil on paper towel.
