sheet pan pizza dough

163 g semolina flour
600 g bread flour
2 cups warm water
1Tbsp olive oil
1tsp instant yeast
1 tsp sugar
1 tsp table salt
Mix 3-4 mins with dough hook

Rise overnight in fridge or 1 hr room temp until double in size

Preheat oven 425
Oil sheet pan, pull and stipple, wait 10 mins, repeat, top with topping
Bake 20-25 mins
